Broiled Halibut with Mango Avocado Salsa

Broiled Halibut with Mango Avocado Salsa

Serves 2
INGREDIENTS
For the halibut:
2 (5 ounces) halibut fillets
1/2 tbsp olive oil
1 1/2 tbsp lemon juice
1 clove garlic, minced
Salt to taste
For the mango avocado salsa:
1 mango, peeled, pitted and diced (200g)
1 small avocado, peeled, pitted and diced (100g)
1 tbsp lime juice
2 green onions, sliced
1 tbsp chopped cilantro
Salt and pepper to taste
INSTRUCTIONS
Place the halibut fillets on a foil-lined baking sheet and sprinkle with salt
Whisk together the olive oil, lemon juice, and garlic and coat each filet
Let the fish sit for about 10 minutes
Combine all of the ingredients for the mango avocado salsa in a bowl and set aside
Set your broiler to high and cook the fish for 8-10 minutes
Top each filet with the mango avocado salsa and serve with rice or cauliflower rice
