Lemon Raspberry Baked Oatmeal

Coach Maggie’s Lemon Raspberry Baked Oatmeal is tangy, lightly sweet, and packed with protein—thanks to Greek yogurt and protein powder. It’s perfect for a spring breakfast or afternoon snack, and it comes together with simple ingredients you probably already have on hand. Pair it with an extra dollop of Greek yogurt and a drizzle of maple syrup for the ultimate treat.
Ingredients:
2 cups rolled oats
½ cup vanilla protein powder
1 tsp baking powder
¼ tsp sea salt
2 tbsp poppy seeds
2 large eggs
1¾ cups milk of choice
½ cup plain Greek yogurt
3 tbsp maple syrup
3 tbsp avocado or olive oil
½ tbsp lemon zest
¼ cup fresh lemon juice
1 cup frozen raspberries
Instructions:
Preheat oven to 350°F and grease a 9x11 baking dish.
Stir together all dry ingredients in a large bowl.
Whisk all wet ingredients (except raspberries) in a separate bowl.
Combine wet and dry ingredients, then pour into the baking dish. Fold in raspberries.
Bake for 40–50 min until golden and mostly set.
Cool for 10 min. Serve with Greek yogurt and a drizzle of maple syrup if you’re feelin’ fancy!
