Arugula Fruit Salad

This is my attempt at copying my wife’s favorite salad, which happens to be from Blaze Pizza!

The balsamic glaze is super versatile so throw it into a small jar and save it for other things as well! I like to keep honey to a minimum in order to bring carbs down, but you could also reduce the balsamic on its own, it will just take longer. Once it cools it will thicken up a bit, so don’t reduce it too much!

INGREDIENTS:

  • 1 bag arugula

  • 1 cup strawberries, sliced

  • 4 oz goat cheese, crumbled

  • balsamic glaze

For the balsamic glaze:

  • 1 cup balsamic vinegar

  • 1/4 cup honey

INSTRUCTIONS:

  1. To make the balsamic glaze, heat up balsamic vinegar and honey in a small pot over med-high heat. Bring to a boil, then reduce heat so it comes to a gentle simmer. Stir frequently until balsamic starts to coat the back of a spoon, about 10-15 minutes. Allow to cool.

  2. For the salad, to preserve freshness and avoid sogginess hold off on the balsamic glaze until you’re ready to serve.

You can also add a protein source such as chicken, tofu, chickpeas or whatever else your little heart desires!
