Barbecued Hassleback Sweet Potatoes

Ingredients:

  • 6 medium-sized sweet potatoes (about 1 1/2 lbs total)

  • 4 tbsp melted butter

  • Salt and pepper to taste

Instructions:

  1. Preheat grill to medium heat

  2. Clean the sweet potatoes and microwave them for about 5 minutes (in batches), then let cool slightly

  3. Cut slits along the sweet potatoes about 1/4" apart, leaving the bottom of the potato intact. I did this by placing a chopstick on each side of the potato lengthwise to avoid cutting all the way through.

  4. Place the sweet potatoes on a sheet of foil, brush with the melted butter and season with salt and pepper

  5. Place them on the grill and cover. Cook for approximately 20 minutes (cook time will vary depending on your grill heat and the size of the sweet potatoes).

  6. Halfway through basting them with any butter that has melted onto the foil.

  7. Serve when they're tender and can be pierced with a fork.
