Gut Healing Chocolate Date and Sweet Potato Mousse

This gut-healing chocolate, date, and sweet potato mousse are so quick and easy to make and requires no baking! My VERY sizable serving ended up being around 20g of carbohydrates, 6g of fat, and 8g of protein, making it a great pre-workout or post-workout treat.

The texture is actually somewhere between a pudding and brownie, so a mousse seemed like a good compromise. The secret ingredient that made these so fluffy and creamy? Beef gelatin. Beef gelatin helps improve gut health, digestion, joint health, and skin health. I added in collagen for an extra protein boost (you could also sub in chocolate protein powder). Collagen has it’s own health benefits too: it helps the body produce more creatine, reinforces your gut lining and helps heal intestinal permeability, and builds stronger bones, joints, and cartilage. Another plus is that it's great for your hair, nails, joints, and skin! Together, beef gelatin and collagen help “seal and heal” your gut.

Gut Healing Chocolate, Date and Sweet Potato Mousse
Servings: approximately 10-12

Ingredients:

  • 1 cup soaked dates pitted

  • 1/2 cup cooked and cooled sweet potato no skin

  • 1/2 cup almond butter 

  • 1/2 cup cacao powder

  • 2 scoops Vital Protein Beef Gelatin

  • 2 scoops Vital Protein Collagen adds some more protein

  • 1 tsp vanilla extract

Instructions:

  1. Soak dates for 4 hours (or as long as overnight) in water.

  2. Put all ingredients into a high power blender with 1/2 cup of the "date soaking water."

  3. Add more date water as needed to make the blender go. This should be VERY thick and VERY creamy.

  4. Use a spatula to scoop out all the mousse into a pan or parchment-lined baking dish. Put into the fridge to harden. You can also put into the freezer for a more solid treat.

  5. Top with coconut, chocolate chips, hemp hearts, nuts ... the sky is the limit!
