Shrimp & Sausage Foil Packets
Ingredients:
1 lb large shrimp
2 chicken sausage links (roughly 14 oz)
1 zucchini
1 yellow squash
1 red onion
1 bunch of asparagus
1 red bell pepper
1-2 tbsp Cajun season
2 tbsp olive oil
1 tsp sea salt
1/2 tsp black pepper
Instructions:
Roughly chop all of your veggies into moderate-sized chunks and place in a large mixing bowl. Slice sausage and add to bowl. Peel and de vein shrimp and also add to bowl. Coat with Cajun seasoning (you can use pre-made or create your own! Use 2 tbsp if you want it spicy!) along with salt, pepper, and olive oil. Mix well.
Layout 3 12x18 foil sheets and add approximately 1/3 of the mixture to each sheet. Fold the long edges over, leaving enough room for steam, and then fold the short edges.
Preheat grill or oven to 400° and place foil packets on and let cook for 15-20 minutes. Be careful not to poke any holes in the bottom when removing it!
